Nectarines have always been a summer fruit to me. Not sure why…maybe because they first show up during summer and have zero business mixing with pumpkin. Yet here they are… still at the grocer weeks into fall. I respect this last final push, not ready to hand it over to the squash family. So why not throw it into a smoothie? I gave it a good old try and went with the mix of sweet and tart in this Nectarine Raspberry Smoothie.

Ingredients
  • 1 nectarine - great for skin, hair and eyes with beta-carotene, vitamin C and lutein an antioxidant
  • ½ lemon juice - great for digestion, destroying bacteria and cleansing the system, plus it’s a natural energy booster
  • ¼ c raspberries - fiber and vitamin C
  • 1tbs coconut oil - helps digestion, strengthens immune system, antioxidants to fight aging and a natural way to boost energy and metabolism
  • 1 cup coconut water (try to find raw, not from concentrate)- electrolytes / potassium for hydration and enzymes that help us detoxify

It’s the season of cherries and as I mentioned previously, my fridge is overflowing with them. I can’t eat them fast enough! I made a really delicious {and gluten-free} Cherry Muffin a few days back and a festive cherry cocktail for the 4th weekend. Now, I’m putting them in my morning smoothies. The Cherry Banana Smoothie is a balance of sweet and tart and perfect to take on the go.

In case you haven’t already noticed, summer fruits are everywhere! Cherries, plums and nectarines, specifically. A few of my favorites that I’m adding to my summer cooking. Since nectarines are a bit difficult to find out of season, I’m determined to make the most of the next two months, starting with a Nectarine Strawberry Smoothie.

Nectarines pack beta-carotene (vitamin A), vitamin C, lutein for healthy skin, fiber and protein.
