Not Your Usual Grilled Cheese

Whoever said the grilled cheese sandwich is a kid's food, hasn't tried one of these. The grown-up versions pack more than just cheese.
Recipe type: Main
Serves: 2
  • 4 slices of dark rye bread
  • 4 oz sharp white cheddar cheese
  • 1 cup kale
  • 1 avocado
  • 4 dill pickles
  1. Lay out two slices of bread..we are making two sandwiches.
  2. Mash the avocado and spread half and half onto the two slices of bread.
  3. Next, spread the kale evenly onto both slices and top with sliced pickles.
  4. Last, add sliced cheese and top with the other two slices of bread. You now have two sandwiches ready for grilling.
  5. Grill on a low-medium heat until cheese is melted.

    I don’t know if I love this post or need to yell at you for posting it…. This is FABULOUS! I love a grilled cheese sandwich and if April is grilled cheese month that means we have to participate right….
